Rapeseed Honey – A Traditional Polish Honey and the First Sign of Spring

Rapeseed honey is one of the most popular traditional honeys in Poland, and also one of the earliest produced in the season. Bees collect nectar for it from the yellow rapeseed blossoms in the spring (in May). Thanks to the widespread cultivation of this plant in agriculture, our bees have abundant and exceptionally valuable forage—especially in the pristine areas of the Lublin region and Roztocze, where our harvests originate.

Why is Rapeseed Honey Called "White Honey"?

The feature that most distinguishes natural rapeseed honey is its incredibly rapid crystallization (this process typically takes just a few days to a few weeks). Sometimes, this unique type of honey begins to crystallize while still in the combs inside the hive! In its liquid state, it is almost colorless or slightly straw-colored, but after natural crystallization, it completely changes its appearance—becoming thick, creamy, and shifting in color to greyish-cream or even snow-white. This is exactly where its popular colloquial name comes from: white honey.
