Heather Honey - known as the king of Polish honeys
Heather Honey is extremely highly valued for its properties and is called the “king of honeys” because heather forage is so limited in Poland. Obtaining pure heather honey is very difficult because of the weather conditions in September. Heather honey is therefore not available every year, which makes it all the more unique
Most distinctive of all - heather honey has an exceptional jelly-like form! This form proves that the honey was harvested correctly and retains all its natural health properties. It is a very demanding process, because the traditional method of spinning the honey out cannot be used. The consequence is the natural presence in heather honey of residues of bee bread, pollen, propolis and wax fractions from the combs. This is not a defect – it makes it possible to confirm the quality and naturalness of the honey (and its origin). The insoluble fraction consisting of these bee products can be skimmed off the finished healthful mixture, but it is not a defect and for many customers it is added value, given the admixture of these noble bee products.

Why is heather honey jelly-like? This is due to its high content of dextrins and proteins, which make this honey stickier and thicker than other varieties. In addition, unlike most honeys, heather honey is not spun out in the traditional way, which also affects its unique structure.Is heather honey always available? Unfortunately, heather honey is not available every year. Obtaining it is very difficult and depends on particular weather conditions in September.
Are the natural inclusions in heather honey a defect? Absolutely not! In the case of heather honey, natural inclusions such as residues of bee bread, pollen, propolis or wax fractions from the combs are proof of its authenticity, high quality and naturalness.
Colour: Ruby-brown when liquid. Slightly orange after crystallisation.
Taste: Pleasant, slightly bitter.
Aroma: A distinct scent of heather flowers.
Storage: A dry, shaded place (temp. 8-15°C). It must be kept cool!
Harvest time: August / September.
Crystallisation: A few weeks to a few months (it forms a jelly-like mass).
