Coniferous Honeydew Honey is the most sought-after honey on the Polish market. It is the most highly valued for its noble qualities and at the same time the hardest to obtain, which makes it one of the most expensive honeys on the Polish market! Coniferous honeydew honey comes from the honeydew of coniferous trees - mainly from fir forage, but honeydew also forms on other trees and shrubs such as pines, larches, spruces and thujas. It is a very unusual honey, because obtaining it depends not only on the forage but also on suitable weather conditions. Honeydew honey is thicker than nectar honey and contains more mineral compounds – especially potassium, phosphorus, calcium, magnesium and iron.

How do you tell honeydew honey from nectar-honeydew or nectar honey?

Genuine honeydew honey has a distinctive, often resinous or spicy taste and smell. It is usually darker and thicker than nectar honeys. It crystallises after some time, although the process may take longer than with some nectar honeys.

As part of the work in the apiary, every beekeeper should also test the so-called specific conductivity of the honeydew honey collected, using a conductivity meter for the purpose. Measuring this parameter makes it possible to determine unambiguously which type the collected honey belongs to. This is precisely the best, clearest and most reliable way of correctly classifying honeydew honeys and distinguishing them from nectar honeys.

Colour: Dark, almost black when liquid. After crystallisation much lighter: brown, olive-green, greyish-brown.
Taste: Delicate, subtly spicy, sometimes also resinous or nutty.
