Honeydew Honey – The Rarest and Noblest Polish Honey
Honeydew honey is one of the most valued and hardest-to-find honeys on our market. Sometimes, due to unfavorable weather (a lack of the so-called honeydew flow), it doesn't even appear in our offer for several years in a row! Unlike traditional honeys, it is not created from flower nectar. Honeydew is a sweet secretion from insects (aphids, scale insects) that feed on the sap of coniferous or deciduous trees. Droplets of this substance, rich in sugars and minerals, cling to needles, branches, and bark, from where they are precisely gathered and processed by our bees.
Honeydew Honey vs. Nectar-Honeydew Honey
In our assortment, you will find both pure honeydew honey (predominantly coniferous honeydew, originating mostly from fir forests, but also from pine, larch, or spruce), and nectar-honeydew honey. The latter is produced in seasons when the honeydew flow does not occur in sufficient quantities, and bees supplement their harvest with nectar from surrounding meadows and forest undergrowth.
Nectar-honeydew honey is an equally fascinating yet slightly milder-tasting alternative that wonderfully combines the qualities of forest and nectar honeys. Both varieties feature a noble profile. To accurately distinguish and classify them, every beekeeper must test their electrical conductivity using professional equipment (a conductometer).
Nutritional Values and Benefits of Honeydew Honey
Due to its exceptionally rich composition, this honey is highly valued in mindful nutrition and daily wellness. Pure honeydew is a true forest treasury of natural ingredients:
- A wealth of minerals: Compared to light nectar honeys, honeydew contains significantly more valuable bio-elements, making it a fantastic addition to a balanced diet.
- Autumn-Winter support: Its unique composition and warming character make it one of the most popular choices during the cooler months.
- A vitality boost: The content of easily digestible carbohydrates instantly nourishes the body, which is invaluable after intense physical or mental exertion.
Exceptional Composition, Taste, and Aroma of Forest Honeydew
From an organoleptic standpoint, authentic honeydew honey is thicker than nectar honey and significantly richer in mineral compounds. It contains valuable reserves of potassium, phosphorus, sulfur, calcium, magnesium, and iron. It is also distinguished by a specific carbohydrate profile (e.g., the presence of melezitose), free amino acids, and proteins.
Its dark, tarry, or deep brown color and expressive, resinous, and sometimes even spicy flavor mean it is perceived as less sweet than classic floral honeys. This aromatic, woody complexity arouses great admiration among connoisseurs and attracts even those who are not typically fond of sweets. It pairs exceptionally well with strong black tea, nuts, and aged cheeses.
