Nectar-Honeydew Honey – A Rare and Noble Polish Delicacy
Nectar-honeydew honey is one of the most valued and hardest-to-find honeys on our market. Sometimes, due to unfavorable weather (a lack of the so-called honeydew flow), it doesn't even appear in our offer for several years in a row! Unlike classic spring honeys, it is created from a unique combination of two of nature's gifts: floral nectar and forest honeydew. Honeydew is a sweet secretion that settles as mineral-rich droplets on the leaves, branches, and bark of trees. Bees collect it and combine it with the nectar of surrounding plants, creating this exceptionally noble product.
How Does Nectar-Honeydew Honey Differ from Pure Honeydew Honey?
In our offer, you will find both classic honeydew honey (most often coniferous—originating from fir, spruce, and pine forests) and nectar-honeydew honey. The latter is produced in seasons when there is slightly less honeydew in the forest, and bees naturally supplement their harvest with nectar from surrounding meadows and forest undergrowth.
Nectar-honeydew honey is an equally fascinating, yet slightly milder-tasting alternative that beautifully combines the qualities of forest and nectar honeys. It is worth knowing that to accurately distinguish between these varieties and classify them correctly, a beekeeper must measure their so-called electrical conductivity using specialized equipment (a conductometer).
Nutritional Values and Benefits of Nectar-Honeydew Honey
Due to its exceptionally rich composition, this honey is highly valued in everyday nutrition and traditional diets. It combines the best of both worlds:
- Unique composition: A harmonious blend of nectar and forest honeydew guarantees a multidimensional, deep taste and aroma.
- A treasury of minerals: Thanks to a large admixture of honeydew, it features a significantly higher content of valuable bio-elements than light multifloral honeys.
- Perfect balance: An excellent choice for gourmets who appreciate resinous, forest notes wrapped in a slightly sweeter, floral profile.
- Versatility: Suitable for those who find pure honeydew honey too sharp or tart, and consider nectar honeys too delicate.
Exceptional Composition, Taste, and Culinary Uses
From an organoleptic point of view, authentic nectar-honeydew honey is usually thicker and much richer in mineral compounds than purely nectar honeys. It contains valuable reserves of potassium, phosphorus, calcium, magnesium, and iron. It is also distinguished by a specific carbohydrate profile (including the presence of melezitose) and proteins.
Its dark color and distinct, often slightly resinous or spicy flavor mean it is often perceived as less sweet than classic honeys. This aromatic complexity arouses great admiration among connoisseurs. It serves perfectly as a sophisticated addition to morning oatmeal, dark bread, a natural sweetener for cool herbal infusions, and as a brilliant base for aromatic meat marinades and salad dressings.
