Acacia honey is one of the few types of honey that has a very light color. Acacia honey is most often described as light straw. Acacia honey paste , the liquid form of honey, is sometimes so light in color that it even appears to be colorless.
Acacia honey is obtained during the flowering period of the black locust, or so-called white lime tree, which is an excellent honey-producing material for bees. Acacia honey is a very unique honey, because it is the only one of many types of honey available in Poland that is dominated by fructose in its composition, which causes its crystallization time to be up to one to one and a half years, even if the ideal storage conditions are maintained. The high fructose content, in addition to causing a long crystallization time, also makes it the only type of honey with a low glycemic index and, as a result, it can even contribute to lowering blood glucose levels.
Acacia honey is a valuable source of substances beneficial to the human body - it contains B vitamins, vitamin C, as well as nutrients such as calcium, iron, potassium, phosphorus, magnesium and manganese.
Acacia honey is one of the favorite types of honey, especially among children who love its liquid consistency, as well as culinary enthusiasts who use not only its liquid consistency but also its sweet delicate taste. This type is often used for making nuts or fruits in honey, which are covered with this unique type of honey.
Acacia honey in the form of a patoka is characterized by a light straw color, sometimes falling into a light green, and sometimes taking on an almost colorless color. After crystallization, however, it takes on a white or light cream color.
