Acacia Honey is one of the most highly valued and exceptional honeys in Poland. Obtained from the flowers of the black locust, it stands out for its very long crystallisation time — it stays liquid for as long as 12 to 18 months.
Its secret is a high fructose content, which not only extends the time it stays liquid but also gives acacia honey the lowest glycaemic index of all honeys. This means it may be suitable even for people with elevated blood sugar.
Acacia honey has a delicate, subtle taste, distinctly sweeter than other honeys (up to 1.8 times!), a light straw colour and a light consistency, which makes it one of the most sought-after products among honey lovers.
